As you lovely readers know, I'm a big fan of pancakes, and when I say big, I mean I have them every day for breakfast, it's a kinda addiction. So pancake day for me is a day full to the brim of celebrating this most wonderful combination of eggs, flour and milk. And not one to do anything by halves, dinner is a 3 course meal, worshiping the greatness of both sweet and savoury tortitas. Ells is over on holiday and Shona popped down for a day for our epic pancake dinner and for some holiday planning (it's getting so real now......) so all 3 of us got stuck in to some creative cooking.
The most quintessential starter with regards to pancakes has to be the smoked salmon and cream cheese blini with caviar. We thought we would take it one step further; heart shaped blinis in honour of St. V happening this week. BOOM.
Dollop on some herby cream cheese and strips of smoked salmon, grind liberally with pepper and you're ready to rock and roll!
For the main course we went crazy. Totally thinking 'outside of the box' crazy..... Bacon bits (pre-cooked) inside the pancake mix, then drizzled with honey (no maple syrup in Spain sadly). They were dangerously addictive, with the perfect combo of salty and sweet. I wholehearted recommend them for a cheeky sunday brunch, it would also work greta with ketchup and HP sauce.
I am very ashamed to admit it, but we became too carried away with our holiday planning to cook and sweet pancakes for dessert! I know, truly shocking news. I'll be sure to make up for it by bringing you some great new recipes soon...watch this space. If you need a craving satisfying now, how about trying these double choc ones, or the healthier pear & oat stacks?

I'm so jealous. Both of the savories sound and look delicious, especially the smoked salmon... and a nice touch with the heart shapes...haha, kill two birds with one stone eh? Looking forward to hearing the holiday plans so far.

Your daughter did a great job of spreading the cream cheese :) She's a natural. You're so lucky to have such talented offspring!
DeleteIt was such a lovely girly evening....although staying up til after 3am when we were up at 7am wasn't our best idea!!
