This isn't exactly a recipe as there's is no culinary skill involved whatsoever, therefore it's perfect for a speedy lunch when you're in need of something healthy and fast! Thanks go to Rosie @TheLondoner for inspiration for this dish, check out her recipe here.
Soup is a great lunch food as it gives you that feeling of fullness that lasts longer than solid food. This recipe is also mostly water so it has minimal calories. Ginger is a total superfood, it's most well known for helping to ward off colds and flu but also reduces pain and inflammation, and some say it's pretty handy with regards to fighting cancer! Therefore have as much ginger as you like, I'm a big fan so am always generous with my quantities!
Serves 1
Ingredients
- 1 Veg stock cube
- 1 portion Frozen sweetcorn
- 1 thumb Root ginger
- Parsley
- 100g Prawns (peeled)
- 400ml Water
(A secret trick to make frozen prawns ready to peel- pop them in the microwave on 30 secs blast!)
Heat the water and veg stock cube, prawns, ginger and sweetcorn in a saucepan. Cook for 6 mins ish until all the food is cooked through.
Add the parsley (chives/corainder work well also)
