Honey & Mustard Chicken Wraps

I have a tendency of getting carried away in the gym, and this week has been no exception.  So when I get home at 9.30pm the last thing I want to do is slave over a hob for hours..... welcome to your new favourite speedy dinner!!

This is super tasty, pretty damn healthy and takes max 10 mins to prepare- so you've got no excuse for reaching for that ready meal now! Thanks to Rosie again for the inspiration.

Honey and Mustard is an awesome dressing for any occasion, but put it over crispy succulent chicken breasts and it becomes something extraordinary. I like to think of it as the Emperor of dressings!

For me this works as a meal in itself, but if you're feeling more than usual hungry, or if cooking for friends, you can serve it with vegetable crudités and dips!


Serves 2

Ingredients

- 2 dsp Honey
- 1 dsp Wholegrain mustard
- squeeze of Lemon
- 2 Garlic cloves (crushed)
- Olive oil
- large pinch Salt

- 2 Chicken breasts
- 2 Tortilla wraps
- Pine nuts
- Spinach
- Mayonnaise


Put the griddle pan on a medium high heat to warm up.

To make the glaze, combine the honey, mustard, a glug of olive oil, a good squeeze of fresh lemon juice and salt in a bowl. Add in a couple of cloves of garlic. Mix well.




Place the chicken breasts onto the griddle pan and drizzle half the glaze onto them. 




When the chicken looks golden and smells awesome, turn them over. Be careful when cooking chicken that it is thoroughly cooked through. I've had too many bad experiences, and so I ended up cutting up the chicken into little bits to be 100% certain.




Once thouroughly cooked, remove chicken from griddle and add to the glaze bowl. Mix thoroughly to coat the cooked chicken in the glaze.




Prepare your wrap! Chuck on a good handful of spinach. Then add the glazed chicken bits. Sprinkle on some pine nuts. And drop on a good spoon of mayonnaise.

Voila, healthy super speedy dinner!!!

  1. Mmm...honey mustard dip has always been one of my favorites for chicken strips. Never thought of using it as a 'glaze' to put on before cooking though. This looks scrumptious!

  2. I eat chicken wraps like this for lunch SO often. But yours looks better than any of my own :) I need to throw pine nuts on top of mine next time.
